Chicken Tetrazzini

This is the first time I have ever made Tetrazzini so I was a little lost going through it. I think mine turned out a little more runny than it is supposed to, but still had great flavor! Zach and JT both enjoyed it and Will was even chowing down on most of it!

Chicken Tetrazzini                                                        

4-6 boneless skinless chicken breasts, cooked             
1 stalk celery  
1 lb. cooked spaghetti                                                  
1 tbsp each salt, pepper, garlic powder
1 tbsp butter (real butter is best)                               
4 or so cups of broth from cooking the chicken
1 med white onion                                                      
 2 cans cream of mushroom soup
1 bell pepper                                                             
1 bag shredded Monterey Jack/Cheddar cheese
                       
Boil chicken until done, chop, reserve 4 or so cups broth.  Cook pasta according to package directions, drain.  Saute onion, celery, and bell pepper in butter.  Add salt, pepper and garlic powder.   Add mushroom soup and broth, mix thoroughly.  Add cooked chicken, heat through.   Combine with cooked pasta in a large, buttered casserole dish.  Top with cheese and bake at 350 about 20 minutes.  Serves 4-6

It was not a very hard recipe, but just a lot of steps and took a while to prep. This is a good one when you have time to commit to supper! 

Poppy Seed Chicken

JT was so excited about this recipe because he calls my dad "Poppy" and he just thought it was the funniest thing that a recipe was named after Poppy. Turns out, he didn't like the recipe as much as the name of it, but Zach and I LOVED it! I think next time I will cut the chicken up into smaller pieces and JT would probably enjoy it much more.

Poppy Seed Chicken                                                         

4-5 large chicken breast halves                                   
 1 ½ sticks margarine, melted
2 – 10oz cans Cream of Chicken soup                       
 2 stacks Ritz crackers, crushed
8 oz. sour cream                                                           
2 T. poppy seed

Boil chicken in very lightly salted water for 1 hour.  Remove from water, cool 30 minutes and cut into small pieces.  Mix chicken with soup and sour cream.  Mix crackers with poppy seeds and margarine.  Sprinkle 1/3 of crackers in bottom of 9 X 13 sprayed, baking dish.  Pour chicken mixture over crackers.  Sprinkle rest of crackers on top.  Bake uncovered 30-40 minutes at 350 degrees.  Serves 10-12.

Lemon-Baked Chicken

How many times can I say it... WE LOVE CHICKEN!! This is another great recipe and super easy. The family loved it especially with a broccoli cheddar rice side and some green beans. Yum!

Lemon-Baked Chicken                                                         

4 boneless, skinless chicken breasts, cut into serving pieces                                             
1 clove garlic, crushed
2 Tbsp. oil or melted margarine                                 
 freshly ground black pepper

In a bowl, combine lemon juice, oil, garlic and pepper.  Arrange chicken in a shallow casserole or baking pan, and pour over it the lemon and oil mixture.  Cover and bake at 350 until tender, about 40 minutes, basting occasionally.  Uncover casserole and bake 10 minutes longer to allow chicken to brown.

Sweet Citrus Chicken

This recipe was good, but not a favorite of the family. Pros: FAST AND EASY... Cons for us: A little too juicy and I have never been a fan of sweet and "sour" together. :)

JT: "Ummm not so much mom."

Sweet Citrus Chicken                                                         

2/3 cup orange juice
1 – 6 oz. pkg. Stove Top Stuffing Mix (Chicken)
1/3 cup firmly packed brown sugar
3 Tbsp. butter or margarine, melted
6 small boneless skinless chicken breasts, pounded to ½ in. thickness and cut into pieces

Preheat oven to 375.  Add hot water to stuffing mix, stir just until moistened.  Set aside.
Place chicken in 13 x 9 inch baking dish.  Mix juice, sugar and butter until well blended; pour over chicken.  Top with prepared stuffing.  Bake 40 minutes or until chicken is cooked through.
Makes 6 servings.

Boneless Buffalo Chicken

Very good recipe! We all enjoyed it, of course we LOVE chicken! This is another one from the Lancaster family Recipe book. Really easy and a quick recipe if you are in a hurry.

Boneless Buffalo Chicken                                                  

3-4 boneless, skinless, chicken breasts       2 cloves garlic (of course)
1 envelope Lipton Onion Soup mix               1 tsp ground cumin
½ cup butter or margarine, melted             1 ½ tsp. red pepper
2 Tbsp white vinegar                                      Blue Cheese dressing
1 Tbsp. water                                                                         

Cut chicken into serving size pieces.  In food processor or blender, blend soup mix, butter, vinegar, water, garlic, pepper and cumin until well mixed.  Place chicken on broiling pan and brush with soup mixture.  Broil until golden brown (approx. 10 minutes).  Turn the chicken, brush with soup mixture and broil again until brown (approx. 6-8 minutes).  Serve with Blue Cheese dressing for dipping.  This can also be prepared on the grill.

I cut the pieces extra small for JT because he doesn't like chewing big pieces. It was very good and we added a rice side dish and some stir fried veggies.

Chicken Salad

Chicken Salad

This is another one from the Lancaster family Recipe book. Although we LOVE chicken salad I think this recipe had a little too much mustard for our family. We will try it again without using the amount of mustard it calls for, but for all of you mustard lovers this is the perfect chicken salad recipe for you!

Chicken Salad

2 lbs cooked chicken
1/2 cup mayo
1/2 cup mustard
1/2 cup celery
2 TBS sweet pickle relish
2 TBS dill pickle relish
1 TBS salt and pepper

Chop the chicken and mix all ingredients. Cover and chill for four hours. Stuff in Joe's tomatoes. 


Catch Up Day!

The past few weeks I have been focused on the boys and my job search, so although I have been cooking I haven't had much time to sit down and write about the recipes. So today I am going to play catch up. My plan is to pull out all of the recipes I have made since my last post, get them organized, and post them by tonight. I am excited to get started again and so very excited both of my boys are feeling much better! I hope you all enjoy the recipes to come!
