Sweet Citrus Chicken

This recipe was good, but not a favorite of the family. Pros: FAST AND EASY... Cons for us: A little too juicy and I have never been a fan of sweet and "sour" together. :)

Zach: "Too much orange juice."
JT: "Ummm not so much mom."

Sweet Citrus Chicken                                                         

2/3 cup orange juice
1 – 6 oz. pkg. Stove Top Stuffing Mix (Chicken)
1/3 cup firmly packed brown sugar
3 Tbsp. butter or margarine, melted
6 small boneless skinless chicken breasts, pounded to ½ in. thickness and cut into pieces

Preheat oven to 375.  Add hot water to stuffing mix, stir just until moistened.  Set aside.
Place chicken in 13 x 9 inch baking dish.  Mix juice, sugar and butter until well blended; pour over chicken.  Top with prepared stuffing.  Bake 40 minutes or until chicken is cooked through.
Makes 6 servings.
