Boneless Buffalo Chicken

Very good recipe! We all enjoyed it, of course we LOVE chicken! This is another one from the Lancaster family Recipe book. Really easy and a quick recipe if you are in a hurry.

Boneless Buffalo Chicken                                                  

3-4 boneless, skinless, chicken breasts       2 cloves garlic (of course)
1 envelope Lipton Onion Soup mix               1 tsp ground cumin
½ cup butter or margarine, melted             1 ½ tsp. red pepper
2 Tbsp white vinegar                                      Blue Cheese dressing
1 Tbsp. water                                                                         

Cut chicken into serving size pieces.  In food processor or blender, blend soup mix, butter, vinegar, water, garlic, pepper and cumin until well mixed.  Place chicken on broiling pan and brush with soup mixture.  Broil until golden brown (approx. 10 minutes).  Turn the chicken, brush with soup mixture and broil again until brown (approx. 6-8 minutes).  Serve with Blue Cheese dressing for dipping.  This can also be prepared on the grill.

I cut the pieces extra small for JT because he doesn't like chewing big pieces. It was very good and we added a rice side dish and some stir fried veggies.
