Poppy Seed Chicken

JT was so excited about this recipe because he calls my dad "Poppy" and he just thought it was the funniest thing that a recipe was named after Poppy. Turns out, he didn't like the recipe as much as the name of it, but Zach and I LOVED it! I think next time I will cut the chicken up into smaller pieces and JT would probably enjoy it much more.

Poppy Seed Chicken                                                         

4-5 large chicken breast halves                                   
 1 ½ sticks margarine, melted
2 – 10oz cans Cream of Chicken soup                       
 2 stacks Ritz crackers, crushed
8 oz. sour cream                                                           
2 T. poppy seed

Boil chicken in very lightly salted water for 1 hour.  Remove from water, cool 30 minutes and cut into small pieces.  Mix chicken with soup and sour cream.  Mix crackers with poppy seeds and margarine.  Sprinkle 1/3 of crackers in bottom of 9 X 13 sprayed, baking dish.  Pour chicken mixture over crackers.  Sprinkle rest of crackers on top.  Bake uncovered 30-40 minutes at 350 degrees.  Serves 10-12.
