Chicken Diane

Delicious! Make this dish when you have a little time. Perfect on top of the rice and with a side of salad. Definitely a new family favorite and one I will be making on non-game nights.

Zach: "It tasted very fresh. I liked that it had a little spice to it."
JT: "I love the mushrooms and everything. It is really good, check!"
Will: --This child needed a nap and screamed his way through dinner. He did eat 2 bites of chicken though, Whoo hoo!

Chicken Diane

3-4 Boneless Skinless Chicken Breasts
2 Tbsp chicken stock
1 stick butter
1/4 cup chopped green onions
3/4 tsp salt
1/2 tsp minced garlic
1/2 tsp cayenne
1/4 tsp white pepper
1/4 tsp black pepper
1/4 tsp dried basil
1/4 tsp dried thyme
1/2 lb mushrooms (1/4 inch slices)
3 Tbsp chopped fresh parsley

Cut chicken into bite size pieces. In a large skillet, melt 1 stick of butter over medium high heat. When almost melted, add chicken. Saute chicken until outside is white, turning once. Add salt, garlic, cayenne, peppers, basil, thyme and oregano to chicken. Stir well. Add mushrooms, cover and reduce heat to low. Simmer on low approximately 15 minutes. Add green onions, chicken stock and parsley. Cover and simmer until onions are tender. Serve over rice.

Breakfast Pizza

This dish is very tasty. My only suggestion would be for more busy parents to cook this the night before and re-heat the next morning. I also did not use a pizza pan, I used a 9X13 baking dish and it turned out just fine.  
Will and I are the only one that tried this recipe and he was eating it so fast he wouldn't even tell me what he thought. He made a few "yummy" faces at me though. 

Breakfast Pizza

1 (8 oz) pkg. crescent rolls
1 lb. pork sausage
1 cup shredded hash brown potatoes
1 cup shredded cheddar cheese
5 eggs
1/4 cup milk
1/8 tsp pepper

Cook sausage in skillet until brown. Drain & set aside. Separate rolls and place in a greased pizza pan, points in center. Press together to make a crust covering pan. Spread sausage over crust & sprinkle on potatoes and cheese. Combine eggs, milk, and pepper. Pour over top. Bake at 375 degrees for 25 minutes.


Crock-Pot Green Beans

Another super easy recipe to throw together. I put these beans on in the morning and they were ready just before JT's baseball game last night. It worked out perfect. I did add more bacon than what the recipe called for. 

Zach: "Really good flavor."
Will: "I like green beans!"
JT: "The bacon looks weird." (He is used to crispy bacon haha!)

CROCK-POT GREEN BEANS

2 (28 oz) cans Large cut Italian Green Beans
1/2 tsp Cavender's All Purpose Greek Seasoning
1/2 tsp Salt
2 TBS sliced onion
2 slices of bacon (I used 4)

Drain liquid off beans, rinse and drain again. Spray Crock-Pot with veg. spray. Add all seasonings. Pour beans into Crock-Pot & barely cover with warm water. Cook on LOW all night and part of morning if serving for lunch. To serve at the evening meal, put in Crock-Pot at 8:00AM and cook on LOW all day.

Taco Soup

This recipe is from the Lancaster Family Recipe book also! It is extremely easy to throw together! Will helped pour in all of the ingredients. The only real prep you have is chopping up an onion. 

Zach: "Flavor is good, needs some spice (add hot sauce or jalapenos)"
JT: "It is kinda good, but I like it a lot with cheese."
Will: "I like with chips"

Taco Soup

1 Pound Ground Beef
1 Onion Chopped
1 Can V8 Juice (48 ounces)
1 Can Pinto Beans
1 Can Whole Kernel Corn
1 Package Taco Seasoning
**Green Chilies added if you like it hot (we did not add the chilies)

Brown beef and onion. Drain. Add Taco seasoning. Mix well. Add other ingredients and simmer 20 minutes. Serve with a topping of grated cheese.
